Baklava Ice Cream
This baklava ice cream is soft, sweet and full of pistachio and baklava. It is the perfect ice cream recipe and pairs two of the best desserts ever!

Make your baklava. Do this by following my small batch baklava recipe or using store bought. Up to you! But the homemade is better. In a food processor, blend 2 tablespoon pistachios with the pecans until a fine crumb has formed. Then add the cinnamon powder and mix in.
In a standing mixer, whip up your double cream until firm peaks have formed. Then, add your condensed milk and whip until all combined.
Add your nut crumb (leave ½ teaspoon for the top of the ice cream) and 2 tablespoon chopped pistachios to the ice cream and fold in.
Add to a loaf tin and freeze for a minimum of 4 hours.
Once frozen, chop your baklava and add to the top. Then scatter your remaining nut crumb and pistachios.
Scoop into cones. Top with more baklava and enjoy!
