Chocolate Orange Cake

Chocolate and Orange go hand in hand. They make one of the most delicious, classic flavour pairings ever! This chocolate orange cake does not disappoint and provides all of the nostalgic flavours of a Terry’s chocolate orange.

Ingredients
  

  • 350 ml Almond milk unsweetened
  • 1 tablespoon Apple cider vinegar
  • 2 ½ tablespoon Orange extract
  • 115 ml Vegetable oil
  • 290 g Sugar white, caster, super-fine
  • 300 g Flour plain, white, all-purpose
  • 100 g Cocoa powder
  • ¾ teaspoon Baking powder
  • 1 ¼ teaspoon Baking soda (bicarbonate of soda)
  • 1 teaspoon Salt
  • 480 g Butter
  • 600 g Icing sugar
  • 1 teaspoon Orange food colouring optional - for orange colour

Instructions
 

  • Pre-heat your oven to 180°C/ 356°F. Prep two baking trays with baking paper on the bottom. I used 2 6 inch baking trays for this recipe.
  • In a large bowl, combine the milk and the apple cider vinegar. Put this to the side and allow it to curdle for a couple of minutes. Then add the oil, sugar and 1 tablespoon orange extract to the milk mixture. In another bowl, sieve the flour, 50g / ½ cup cocoa, ½ teaspoon salt, baking powder + soda and combine. Using a large spoon, add the dry mixture to the wet, whisking as you go.
  • Pour your cake batter into the two baking trays and bake for 45 minutes, or until a toothpick comes out clean.
  • Once your cakes are completely cool, cut the top off of them to ensure that they are completely flush with the baking tray. This means they are both equal heights. Then, cut them into equal layers. I did four cake layers and I used a cake leveller to do this (see my link above if you want to buy one of these).
  • In a standing mixer, mix the butter on a high speed for 1 minute. Then, add the icing sugar, 1½ tablespoon orange extract + ½ teaspoon salt and mix on a low speed for around 30 seconds and then increase to a high speed, until combined and fluffy (around 1 minute). Then, remove around a quarter of the buttercream icing from the standing mixer and place it into a small bowl. Add the orange colouring to this small bowl and mix together (this will be your orange buttercream for the middle of the cake). Back to the standing mixer, add 50g ½ cup cocoa powder. Combine for a further minute. Add 1 tablespoon of water at this point if you think the icing needs to loosen up a little bit.
  • Using a cake plate, layer the sponges up evenly with the orange buttercream icing in the middle. Make a circle of chocolate icing around the edge before adding the orange buttercream in the middle- this acts as a fort (see pictures below). Piping bags make this easier. Then add the chocolate buttercream to the outside of the cake. I use a cake spatula to make this smooth. Add any decoration that you wish to the top! Enjoy :D
