Cookie Dough Bites

These cookie dough bites are easy, quick and delicious. They are no-bake so require minimal effort but the flavour and texture is wonderful.

Ingredients
 
 

  • 160 g Plain white flour all-purpose
  • 110 g Unsalted butter
  • 100 g Soft light brown sugar
  • 1 teaspoon Vanilla extract
  • 90 g Chocolate chips I used milk and dark
  • ¼ teaspoon Salt
  • 100 g Chocolate

Instructions
 

  • If your flour is already sterile then you can miss this step! If you want to ensure that your flour is safe to eat 'raw', you will want to heat it up briefly before using. You could do this way ahead of time if you wanted! Heat your oven to 180°C/ 356°F. Spread the flour out onto a lined baking tray and bake for 5 minutes. Then remove and leave to cool. Then it will be ready to use!
  • In a standing mixer, beat your butter and sugar together on a medium speed for a few minutes, until the butter and sugars are creamed together. Then add the vanilla extract and combine again. Then add your flour and mix again on a low speed, until the flour is combined (around 1 minute). Don't over mix at this stage so only mix until the flour is combined. If needed, you could add 1 tablespoon milk to loosen the dough.
  • Add the chocolate chips and combine with a spoon until the chocolate chips run through all the cookie dough!
  • Using a tablespoon, make a rough cookie dough ball and place it onto a plate (don't worry if these aren't perfect ball shapes, we will shape them properly later). Repeat this process until all the cookie dough is finished. Place the plate into the fridge and allow them to chill for a couple of hours. If you want to speed this process up, place them into the freezer for 30 minutes.
  • Once the rough cookie dough balls are completely cold, use your hand to make them a perfect circular shape. This should be easy to do if the cookie dough is cold enough.
  • Finish the bites with whatever decoration you want. Melt the 100g of chocolate and dunk the cookie dough into the chocolate and coat them completely. You could also do drizzles of chocolate or just stick to more chocolate chips- completely up to you! My favourite were the ones fully coated in chocolate with a little bit of flakey sea salt.
