Maple and Pecan French Toast Crumpets
These Maple and Pecan French Toast Crumpets are a perfect easy vegan breakfast choice. It is such an easy way to enjoy a French toast with the twist of a crumpet! This recipe can be made in about 15 minutes, making it an easy, quick choice when you want something quick or you are in a rush!

- 2 Crumpets
- 4 tablespoon Single Cream I use an oat-based one
- 1 tablespoon Maple Syrup
- 1 teaspoon Ground Cinnamon
- 1 tablespoon Caster Sugar
- 4 tablespoon Chopped Pecans
- 2 tablespoon Vanilla Ice Cream
- 1 tablespoon Butter
In a large frying pan, add your butter and place on a medium to high heat.
In a large bowl, add your cream, sugar, maple syrup + cinnamon and combine it together with a spoon until all incorporated.
Place one crumpet into the French toast mixture and leave it for around 1 minute. Then, flip it over and leave it to soak for another minute. Repeat this process with the other crumpet.
Once the butter in the frying pan is all melted, place the soaked crumpets into the frying pan for approximately 2 minutes on each side. This will make the crumpets golden brown and nice and crispy on the outside.
Place each crumpet onto a plate. Then add the following onto each crumpet: 2 tablespoon chopped pecans, a tablespoon of vanilla bean ice cream, extra single cream, extra maple syrup and finally, a dusting cinnamon powder. Then, devour!! Enjoy whilst they are still warm.
