Bake
Make the frosting
Decorate
Hint: Cool the ganache before you spread it on top of the banana bread. You can put it in the fridge for a while to firm it up!
Substitutions
Here are some potential substitutions that you can opt for:
- Ganache - you do not need to make the ganache, you could dimply enjoy the banana bread on its own.
- Chocolate chips - if you wanted, you could add chocolate chips to the banana bread if you wanted.
Equipment
All you will need is an 8 inch baking tin with a removable bottom. The bottom will help you remove this very easily. I also used an electric standing mixer to make the frosting. If you do not have a standing mixer you could just use a hand whisk though! To have a look at the equipment I have used for this recipes and others, check out my like to know it.
Storage
Store the chocolate ganache banana bread in an airtight container for 2-3 days. The fruit on top of the cake (if you choose to decorate with fresh fruit) will go off first.
Top tip
Use a baking tin with a removable bottom. This really helps you get the cake out of the pan! I also put baking paper on the bottom so that you can easily get the banana bread off of the tin.

Chocolate Ganache Banana Bread
Ingredients
- 290 g Banana ripe
- 75 ml Vegetable/ coconut oil
- 180 g Soft light brown sugar
- 1 teaspoon Baking soda
- ¼ teaspoon Baking powder
- 195 g Plain white flour
For the chocolate ganache frosting
- 200 g Chocolate melted
- 75 g Chocolate hazelnut spread
- 75 g Peanut butter
Instructions
- Pre-heat your oven to 180°C/ 356°F. Grease an 8 inch baking tin with a small amount of butter and baking paper on the bottom. I use a tin with a removable bottom.
- Smash your bananas up as much as you can, forming a banana paste. You could use a fork for this, or an easier option is to just use a food processor (it makes this way quicker). Add the oil, sugar, baking soda + baking powder and flour to the bowl, in that order. Mix together between each ingredient addition.
- Put your banana bread mixture into you greased baking tin. Bake the banana bread for 30 minutes, or until a fork comes out of the middle clean.
- Once your banana bread is cool, make your frosting.
- In an electric standing whisk, mix your melted chocolate, peanut butter and chocolate hazelnut spread. Mix until all combined. Then chill for 45 minutes, or until slightly firmer and easy to spread on the banana bread.
- Spread the frosting on top of the cake. Add chopped banana and raspberries to the top!
