    This one layer pistachio cake is ridiculously yum. It has a layer of soft, fluffy pistachio sponge topped with whipped cream and berries. It is the perfect summer cake!

    This cake is wonderfully easy to make and completely delicious. I love pistachios so adding it to most desserts is a yes from me. This cake worked so well.. the combination of pistachio sponge, whipped cream, fresh berries and full pistachios was just unreal.

    Ingredients

    This recipe requires you to make a classic vegan sponge made with typical ingredients listed below. The toppings are simple: double cream, fresh berries and pistachios. You could choose other toppings if you want some variety!

    Instructions

    You are going to use a standing mixer to help you make the cake batter. This makes your life easy! You are going to mix the butter, oil and sugar together before adding the vanilla extract and mixing. Then, you will add your flour, baking powder and pistachios. You will then add your vegan buttermilk (the mix of milk and apple cider vinegar). This will make your delicious and minimum effort pistachio sponge.

    Substitutions

    If you like the sound of this pistachio cake but want to switch something up, here are some suggestions of substitutions that you could do.

    • Nuts - you could choose a different nut if you do not fancy pistachios. You could opt for almonds, pecans, cashews or whatever else you fancy!
    • Toppings - you could make a buttercream if you fancy something sweeter that whipped cream.
    • Fruit - If you don't want the fresh fruit vibe, you could go for more nuts, chocolate or even lemon peel.

    Storage

    Store the cake in an airtight container for 2-3 days. The fresh fruit is what will go off first.

    Top tip

    Use a standing mixer to make your life 10000x easier. You can get away with using a big bowl and a whisk but a standing mixer will enable you to relax and watch you cake batter come together easily and effectively.

    FAQ

    Can I make this GF?

    You could make this pistachio cake GF by using GF flour. I recommend a 50:50 gf flour.

    Can I use different nuts?

    Yes, if you fancy something different use different nuts like peanuts, cashews, almonds or pecans.

    Ingredients
     
     

    • 350 ml Almond milk unsweetened
    • 1 tablespoon Apple cider vinegar
    • 115 g Butter unsalted
    • 115 ml Vegetable oil
    • 300 g Sugar caster, white, super-fine
    • 1 teaspoon Salt
    • 2 teaspoon Vanilla extract
    • 350 g Flour plain, white, all-purpose
    • 1 tablespoon Baking powder
    • 35 g Pistachios chopped finely
    • 200 ml Double cream whippable
    • 2 handfuls Strawberries + blueberries
    • 1 handful Whole roasted pistachios

    Instructions
     

    • Pre-heat your oven to 180C/ 350F.
    • Make your vegan buttermilk by pouring your milk into a jug and adding the apple cider vinegar. Whisk briefly, for 1-2 seconds and then leave aside. it will curdle.
    • In a standing mixer, beat the butter, oil and sugar together for 2 minutes. Then add the vanilla extract and combine. Then add your flour, baking powder, salt and pistachios and mix on a slow speed. Gradually add the milk mixture as it mixes until all well combined.
    • Pour your pistachio cake batter into a lined 8 inch baking tray with a removable bottom. Bake for 45-55 minutes, or until a knife comes out of the centre clean and you feel confident it is cooked all the way through. Then, leave to cool
    • Once your cake is cool, whip you double cream up in a standing mixer until firm peaks have formed.
    • Chop some of your strawberries for the top of the cake.
    • Add you whipped cream to the top of your cake and use a mini spatular to spread it out. Then, add your strawberries, blueberries and whole pistachios. Then, slice it up and enjoy!
